A versatile sauce with a bit of “kick”, courtesy of fresh ginger and crushed red pepper flakes. The heat is beautifully tempered by brown sugar and plenty of fresh lime juice, and you will love this sauce with everything from a crudité platter to grilled chicken and roasted vegetables!
Place the garlic cloves in a food processor or blender and pulse to chop. Add the tahini, brown sugar, soy sauce, ginger, red pepper flakes and lime juice. Blend until well combined. Add 1/2 cup of water and blend again. Add more water, a bit at a time, until the desired consistency is reached. Refrigerate, covered, until ready to serve.
As the tahini is blended it will start to “seize up” and become quite thick. This is normal; as soon as you add the water the consistency will return to a smoother state.
You can make this recipe by hand using a whisk instead of a food processor or blender. You’ll want to finely mince or grate the garlic before adding to the other ingredients.
