You can substitute an equal amount of honey for the maple syrup.
You can add in any mix-ins that you like! Suggested mix-ins are: 3/4 cup chopped nuts, 1 cup shredded coconut, 1 cup chocolate chips or 1 cup of dried fruit. If using dried fruit, cut up larger fruits like apricots or dates, and always add them after the granola comes out of the oven.
You can store the granola at room temperature for a few days. For longer storage, and to preserve the crunchy texture, keep in the freezer.
