1 cup crumbs from your favorite buttery salted crackers
1 cup confectioner’s sugar
1 cup white chocolate chips
Flaky sea salt, for sprinkling
Line an 8” x 8” pan with wax or parchment paper, leaving an overhang in both directions.
In a heatproof bowl set over a pan of barely simmering water, melt the butter and 3/4 cup of the tahini. Remove from heat and add the cracker crumbs and confectioner’s sugar, stirring until well combined. Transfer to your prepared baking pan and use a small angled spatula to press in evenly. Clean and wipe your bowl.
Place the chocolate chips and remaining 1/4 cup of tahini in your cleaned bowl and return to the top of the pan of barely simmering water. Stir occasionally, until melted, and pour over the crumb layer. Rap the pan on the counter a few times to level, and sprinkle with the flaky sea salt. Refrigerate overnight.
Using your parchment paper “sling”, transfer the bar to a work surface and cut into 16 squares.
You can double the ingredients and make these bars in a 9” x 13” pan.
Butter can be substituted with margarine or a non-dairy spread.
White chocolate chips can be substituted with milk, dark, or dairy-free chocolate chips.
Cracker crumbs can be substituted with anything you like! Graham crackers, chocolate wafer cookies, saltines, corn flakes – just be sure to create enough crumbs to measure 1 cup!
