Quinoa Kale Salad with Green Goddess Tahini Dressing
Talk about eating your greens! This gorgeous salad is as delicious as it looks, filled with all the good things – quinoa, kale and avocado – and topped with a Green Goddess Tahini dressing.
Kale is not only full of nutrients, it’s a hearty green as well, so it won’t wilt after it’s dressed – even a day or two later! Massaging some of the dressing into the leaves helps the kale absorb the flavors while softening the leaves for easier eating!

Ingredients
1 small bunch curly kale, ribs removed and torn into bite-sized pieces
1 cup cooked quinoa (see cooking instructions, below)
1 cucumber, chopped
Zest and juice of one lemon, separated
1 avocado, diced
Directions
Place the kale in a large serving bowl. Add 2 – 3 tablespoons of dressing and “massage” into the kale leaves, coating thoroughly (this softens the kale without wilting the leaves).
When ready to serve add the quinoa, cucumber and lemon juice to the kale and toss to combine. Top with the diced avocado and lemon zest and serve, passing additional dressing on the side.
To cook quinoa: Place 1 cup of uncooked quinoa in a strainer and rinse thoroughly. Transfer to a small saucepan along with 2 cups of water and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork. Leftover cooked quinoa can be frozen in 1-cup portions in plastic bags for future recipes.
