This is the dressing you will turn to again and again! Full of flavor and ready in about 5 minutes, all you need is your food processor or blender. Even better, you can adapt pretty much every aspect of this easy recipe! Dial the heat up or down, add more garlic, or switch up the spices. Whip up a batch early in the week as it makes enough for several meals!
Place the tahini, garlic, lemon juice, cumin and red pepper flakes in your food processor. Blend till completely broken down, stopping to scrape the bowl as needed. With the processor running, slowly add 1/2 cup of water, blending until smooth. Add additional water, a little bit at a time, if needed until the desired consistency is achieved. Season with salt and pepper to taste. Store covered, in the refrigerator.
As the tahini is blended it will start to “seize up” and become quite thick. This is normal; as soon as you add the water the consistency will return to a smoother state.
You can make this recipe by hand using a whisk instead of a food processor or blender. You’ll want to finely mince or grate the garlic before adding to the other ingredients.
