You may think that chickpeas are the star of this recipe but it’s actually tahini! We use a full half-cup in this recipe to make it extra smooth and creamy, which is heads and shoulders above the store bought variety!
Hummus is one of the most versatile recipes around – and it couldn’t be easier to make! Simply blend drained canned chickpeas with tahini, garlic, lemon juice and spices, then add water until you reach your desired consistency.
You’ll of course want to pair it with crudites and pita wedges, but don’t stop there! Spread it on toast, use it in deviled eggs, or layer it in your favorite sandwich!
Olive oil, finely chopped parsley and paprika for garnish
Directions
Accompaniments: fresh pita wedges, assorted raw vegetables
Place the drained chickpeas and garlic in a food processor. Blend until completely broken down, scraping down the bowl as needed. Add the tahini, cumin and lemon juice and blend again. Scrape down the bowl and add the water, a bit at a time, until you’ve reached your desired consistency.
Transfer to a bowl and drizzle with a bit of olive oil. Sprinkle with chopped parsley and paprika and serve with accompaniments.
