Ingredients
2 tablespoons low-sodium soy sauce
Juice from one lime (about 2 tablespoons)
1 tablespoon honey
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1 pound boneless skinless chicken breasts, cut into 1” strips
Place the soy sauce, lime juice, honey, ginger and garlic powder in a small bowl. Whisk to blend. Pour into a heavy plastic bag and add the chicken, tossing to coat. Refrigerate for at least 30 minutes or up to overnight.
Preheat your grill to medium-high; if using bamboo skewers soak in water for 30 minutes.
Remove the chicken from the marinade (discard the marinade) and thread onto your skewers. Grill, turning frequently, until chicken is cooked through (about 5 – 10 minutes). Serve with dipping sauce.
